Heat half of the olive oil in a skillet over medium heat. Add the chicken and cook until fully cooked, about 5-7 minutes per side. Remove and set aside.
Cut the chicken into even pieces for uniform cooking.
In the same skillet, heat the remaining olive oil. Add the chopped onion and bell pepper, cooking until softened, about 3 minutes.
Stir frequently to prevent the vegetables from sticking.
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Be careful not to burn the garlic as it can turn bitter.
Cook the spaghetti according to the package instructions. Drain and set aside.
Reserve a cup of pasta water to adjust the sauce consistency if needed.
Add the chicken broth, dried basil, and Parmesan cheese to the skillet. Stir to combine and let simmer for 3 minutes.
Adjust seasoning with salt and pepper to taste.
Return the cooked chicken to the skillet and simmer for another 2 minutes.
