Heat a large saucepan over medium-high heat and add a drizzle of olive oil.
Fry the onions and garlic until the onions become transparent.
Add the ras el hanout, cinnamon, and salt. Stir and mix with the onions for 1-2 minutes.
Add the aubergines, red pepper, and sweet potatoes. Fry, stirring, for 2-3 minutes.
Add the chopped tomatoes, coconut milk, tahini, harissa paste, cayenne pepper, raisins, and honey.
Cover the pan and allow the stew to simmer over low heat for 15 minutes.
Taste and adjust the seasoning with salt and pepper.
