A simple and quick soda bread recipe that doesn't require yeast or kneading, perfect for a healthy homemade loaf.
Preheat the oven to 230°C.
In a mixing bowl, combine the wholemeal flour, wholemeal spelt flour, rolled oats, bicarbonate of soda, and salt.
Add the pumpkin seeds, sunflower seeds, and chopped walnuts to the bowl.
Pour in the buttermilk and gently mix to form a soft dough.
Gradually add the milk to adjust the dough's consistency.
Shape the dough on a floured surface and place it in an oiled 900g loaf tin.
Alternatively, shape the dough into a flattened ball and cut a cross into the surface for a traditional shape.
Scatter extra seeds over the work surface and roll the loaf over them to stick.
Bake the loaf in the oven for 10 minutes.
Reduce the oven temperature to 200°C and bake for an additional 20-30 minutes until golden and firm.
Slice any leftover bread and store it in a freezer bag.
