A delightful and easy-to-make layered tortilla casserole, perfect for a family dinner.
Preheat your oven to 400°F (200°C).
Preheating ensures even cooking and a perfect texture for the casserole.
In a large skillet, cook the ground turkey, onion, and garlic over medium heat until the meat is browned and the onion is translucent. Drain any excess fat.
Stir frequently to prevent sticking and ensure even cooking.
Stir in the diced tomatoes, chili powder, and cumin. Bring the mixture to a boil, then remove it from the heat.
Simmering the sauce allows the flavors to meld together beautifully.
In a mixing bowl, combine the ricotta cheese, mozzarella cheese, and cilantro.
Use a fork to mix thoroughly for a smooth and even consistency.
Place one tortilla in a 9-inch round baking pan coated with cooking spray. Layer with half of the meat sauce, another tortilla, all of the cheese mixture, another tortilla, and the remaining meat sauce. Top with the last tortilla and sprinkle with cheddar cheese.
Press down gently on each layer to compact the casserole for even baking.
Cover the pan with foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes to melt the cheese.
Let the casserole rest for a few minutes before slicing to allow the layers to set.
Slice and serve the casserole warm. Garnish with additional cilantro if desired.
Pair with a side salad or guacamole for a complete meal.
